Chicken Cordon Bleu Casserole

This is one of my favorite go-to recipes when I need something quick but want something more "meal-like" than grilled cheese!
Ingredients:
3-4 chicken breasts
1 block of Swiss cheese
6-8 slices of ham
Club or Ritz crackers
2 tablespoons butter
3 tablespoons Parmesan cheese

1) Preheat the oven to 350 degrees.
2) Spray a casserole dish (recipe calls for 9 x 13, I prefer a smaller one).
3) Cut chicken breasts in half and lay the strips in the dish.
4) Cover chicken with ham and the grated swiss cheese.
5) Crush crackers (we like using Club crackers, but Ritz works too), mix in parmesan cheese and sprinkle over the top. 
6)Cut up 2 tablespoons of butter over the top to melt while baking.
7) Cook for 30 minutes, making sure that the juices from the chicken are clear.
8) ENJOY!

Jello Cake

Alright folks, this is the easiest and yummiest cake recipe! I make this all the time and my husband keeps asking for more! You can choose whatever flavor of Jello you'd like. Our favorite is strawberry! Instead of Cool Whip for the top, you can also choose to use pudding.
Ingredients:
1 White cake mix
1 big box of jello (or 2 small boxes)
2 cups of hot water
1 container of Cool Whip

1) Make the cake according to the directions on the box and bake.
2) While the cake is still hot, use a fork and poke holes all over the cake.
3) Mix the Jello packet(s) into 2 cups of hot water and pour over the cake. Make sure to cover the entire cake!
4) Place the cake in the fridge and let it cool. Once it's cool, cover with Cool Whip and it's ready to eat!
